Got a decent side-view sketch of what this thing is gonna look like. Obviously this isn’t final, I was mainly getting measurements. The structure needs to be assessed next.

I would suggest flipping the pedals so they are like a swing style. On my rig, the previous owner pulled the pedals out of the case and mounted them upside down. Most comfortable setup I've had. Though my rig is ready for an update.

You should rip the wheel out of a parts car also and make that work.

One time I did have the idea of grabbing a real steering wheel and stuffing an Xbox 360 controller in it.

Haha, I’ve also seen some tutorial on how to use a real shift knob and possibly steering wheel on a G27.

If I ever get around to it, I'm going to make a ottoman cockpit type wheel set up. Structure on both sides, front & back.

There are quick release kits available for the G27 to add real wheels but you lose all the button functionality.

Keep in mind that the steering wheel is not perpendicular to its base, so if you want the wheel to be vertical you’ll have to angle its mount toward you.
That said, if you angle the steering wheel so that its shaft points at your shoulders, or at a point at shoulder height in your chest I should say, will make long gaming sessions much more comfortable.

Yeah I know the steering wheel is slightly angled upward. That was just some drawing.
